Evaluation of Staple Foods Supplemented with Defatted Coconut Testa Flour

Coconut testa is an important byproduct of coconut processing. In this study, the acceptability staple foods incorporated with defatted flour (CTF) was investigated. Foods supplemented CTF will be ideal as a functional food for diabetes. Formulations string hoppers were done by mixing white rice (RF) in four different ratios; F1 (RF: CTF=70:30), F2 CTF=75:25), F3 CTF=80:20) and F4 CTF=85:15). Likewise, formulation flat-bread rotti prepared wheat (WF) P1 (WF: CTF=60:40), P2 P3 P4 CTF=90:10). Acceptability formulations determined using Friedman test preference ranking test. According to sensory evaluation, highest score overall other attributes observed composite mixtures 25% (idiyappa) 20% flat- bread (rotti). The proximate analysis finished products namely, hopper (rotti) showed better nutritional properties regard protein, dietary fiber, fat mineral content than respective used their preparation. Furthermore, IF samples increased compositions terms when compared RF samples. conclusion, quality fibre two formulated indicated potential use anti-diabetic foods.
